Korean-Style BBQ Flanken Short Ribs
These Korean-style flanken ribs are sweet, salty, sticky, smoky, and just spicy enough to keep things interesting. The thin-cut ribs soak up tons of flavor and cook fast over hot charcoal, giving you incredible caramelized edges and smoky char in just a few minutes. Perfect for appetizers, tacos, rice bowls, or just standing around the grill eating them faster than you planned. 🍖🔥
Ingredients
1️⃣ Make the Marinade
Combine all marinade ingredients in a bowl and whisk until the brown sugar dissolves.
Place the flanken-style short ribs into a large zip-top bag or shallow container and pour the marinade over the top.
Marinate for at least 2 hours, but overnight is even better for deeper flavor.
💡 Pro Tip: Reserve a little marinade before adding the meat if you want to baste while grilling.

2️⃣ Fire Up the Grill
These ribs are best cooked over charcoal or wood for extra smoky flavor. Set up the grill for high direct heat and let the grates get nice and hot, but definitely keep a cooler zone for when the flair ups get too big. My Weber Kettle Master Touch makes this easy with the charcoal baskets. |
.3️⃣ Grill the Ribs
Place the ribs directly over the heat and grill about 2–3 minutes per side.
Because flanken ribs are thin, they cook quickly and develop an amazing char fast.
Baste lightly while grilling if desired.
🔥 Keep an eye on them — the sugars in the marinade caramelize quickly and can burn if left unattended.
4️⃣ Serve
Serve whole family-style or slice between the bones for easy party bites and hors d’oeuvres.
These pair great with:
Flanken-style ribs are cut thin across the bone, making them perfect for hot and fast grilling.
More surface area means more marinade flavor and more crispy charred edges --
and that’s never a bad thing.
