BBQ chicken bombs Bacon wrapped chicken breasts stuffed with roasted red peppers, jack cheese and cilantro lime pesto.
A huge hit as a BBQ side dish, but quite often used as a main dish in my house. |
start with boneless skinless chicken breasts.
Fillet the breasts in half to get 2 somewhat thin pieces of meat. Cover the breasts with plastic wrap and pound them out with a meat tenderizer, or whatever other heavy flat thing you have,, until they are about 1/4 inch thick. Then cut into somewhat uniform strips.

Take slices of bacon and cut them in half. Lay the end of the chicken slightly over one of the slices of bacon. Then add a spoonful of cilantro lime pesto, a slice of roasted pepper ( I used store bought roasted red peppers in a jar) then a large pinch of shredded cheese and roll up the chicken so that the seam ends up on top of the slice of bacon

Wrap the bacon tightly around the chicken, then pick it up and rotate it 90 deg. and place it on top of the other half of the bacon slice. Then wrap that slice tightly around it and add a coat of BBQ rub.
