Chicken tacos This is a simple chicken taco recipe that I use on a very regular basis in my house. I prefer to use chicken thighs for this recipe. the meat is more tender and juicy.

First put a sear on the chicken. I do this either in a cast iron skillet or on the grill directly over the heat. This gives the chicken added texture and more depth in flavor. Just a couple of minutes per side, enough to give it a good color. Don't worry about cooking it all the way through at this point. Once seared, place the chicken in a covered skillet with about a cup of chicken stalk and another splash of the taco seasoning. Simmer on medium low until fork tender and can be shredded easily.
