Coat the ribs evenly with your favorite BBQ rub.
This is my BBQ Rub recipe. Then straight to the smoker. If you are using a grill to smoke your ribs, make sure to set it up for indirect cooking, with your heat source on one side and your ribs on the other. Try to keep the temp at about 225. When the meat starts to pull away from the edge of the bones, typically 3 - 4 hours depending on your smoker temps, then wrap tight in aluminum foil and return to the smoker for 30 minutes to an hour. This steams the ribs helping to tenderize them.
The final step is to unwrap the ribs and coat them with your favorite BBQ sauce, then back in the smoker for another 10 - 20 minutes to caramelize the sauce or grill them over medium low direct heat until the desired color is achieved.
