Angela's Marinara Sauce

​ This is Angela's go to quick easy ready in 30 minute recipe. It's also her simmer sauce all day long recipe. Both delicious. Same recipe one is bright and light the other bold and hearty. Just depends on your cooking time.
  • ​1 tablespoon olive oil
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1 28 oz can dice tomato
  • 1 28 oz can whole peeled tomato
  • 1 cup chicken broth
  • 2 tablespoons Italian seasoning
  • 2 fresh basil leaves sliced into strips 
  • 1 thyme sprig 
  • 1 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

    Heat the olive oil in large skillet.  Add the onion and saute over medium heat until translucent. Add the garlic and saute for another minute or so. You want the garlic to be just slightly softened. You don't want to brown the garlic as it will take on a bitter flavor. Add the canned tomatoes, chicken broth, Italian seasoning, basil and thyme sprig. Simmer for 20-30 minutes stirring occasionally then salt and pepper to taste.  It's key to let the flavors build. It can be ready to eat now or..  Turn heat to low and let simmer for as long as you like. If the sauce gets to be thicker than desired just add more chicken broth.
