I am going with boneless skinless thighs for this one, coated evenly with my BBQ rub. Set up the grill for indirect 2 zone cooking. Sear the thighs on both sides until lightly charred, then move them to the indirect side of the Q. Try to keep the temp below 300 deg. Preferably around 250. The lower temp will help keep from over cooking and drying them out.
