The sweet tropical taste of pineapple mixed with the hearty smoky flavor of the bourbon makes for a perfect glaze for BBQ chicken, Pork, or  jalapeno poppers

Bourbon Pineapple BBQ Sauce

  • 1/2 medium onion diced (about 1/2 cup)
  • 2 cloves garlic minced
  • 1 1/2 cups brown sugar
  • 1 8 oz can crushed pineapple
  • 1 cup ketchup
  • 1/2 cup your favorite bourbon
  • 1/3 cup molasses
  • 1/2 teaspoon black pepper

In a medium sauce pan saute the onions on medium heat until slightly translucent,
then add the garlic. Saute for another minute or two until the garlic becomes just soft,
then add all other ingredients and simmer for 30 minutes.
Simmering the sauce burns off the alcohol leaving just the flavor of the bourbon.
Allow to cool enough to put in a blender or use your immersion blender to
make the sauce smoother and meld the flavors.

It can be served right away but letting it set in the fridge overnight will allow the flavors to meld even more.
It typically taste better the next day.
