BBQ chicken

  Barbecue chicken is so simple and tasty and extremely versatile.
Chicken tacos, grilled chicken sandwiches,
​chicken pasta or just stand alone BBQ chicken. 
It took years for me to learn how to cook chicken. And once I learned how, I realized how easy it is.
I was always afraid of under cooking it and killing everyone who ate it.
​So it always ended up over cooked and dry.
And the only thing I killed was the vibe.

Rotisserie BBQ chicken

  The method I use the most when grilling chicken thighs or breasts is to apply a dry rub then sear over medium direct heat. Then move to indirect low heat 225-250 if possible. Let them cook with the lid closed until they reach the desired temp. Learning the heat zones of your bbq and how to control them is essential. Every bbq is different. Trust me! I own about 15 and every one of them is different.
